What are microgreens and why should you care?
Microgreens are essentially seedlings of edible herbs and vegetables. Their colour and vibrancy make for an obvious choice in terms of visual appeal, giving dishes flare. But these little things also pack a flavourful punch.
Microgreens are also loaded with vitamins C, E, K, lutein and beta-carotene. Studies have shown that in some cases they provide 40 times the vitamin content of mature leaves of the same plant.
